Pickled daikon radish is a common and easy-to-make dish in Japan.

Ingredients:
Daikon Radish 400g
Vinegar (apple cider or rice vinegar) 2 tbsp
Shio Koji 1 tbsp
Sugar 3 tbsp
Steps:
1. Prepare Daikon: Peel and cut the daikon radish into slices
2. Prepare Brine: mix Shio koji, rice vinegar, and sugar together
3. Pickling: put brine and daikon radish in a container with a lid, put it in the fridge for 2-3 days
4. Enjoy
